Welcome to WHAT IF Wednesday! WHAT IF... Someone asked you for your Favorite Recipe?Are you a Main Dish, Side Dish or Dessert?
I’d have a hard time picking just one recipe. I’ve always loved to cook and have some recipes from relatives who have now passed on, and some I’ve created myself.
My top three favorites:
Lima Beans and Ham
Banana Bread
Corned Beef Brisket into Reuben sandwiches
Rich, smokey ham and lima bean!The Lima beans and ham is a great winter meal, full of rich broth and smokey ham chunks. It’s also one of the easiest to make main dishes I know. Soak beans overnight in water. In the morning thin slice celery and saute in butter until translucent, cut or tear ham into one inch chunks or cubes. In large enamel pan put ½ soaked beans, water to cover plus 1 inch, sauted celery, ham chunks, onion & garlic (dry, granulated), a few bay leaves, some ground thyme and fresh ground black pepper. Cook at 350° F for 2 to 3 hours until beans become mushy, stir and add in rest of bean, cook another 2-3 hours. Alternatives: you can use chicken broth for ½ of the water for a richer broth.
Delicately sweet and moist quick bread, best warm w/butter!The Banana bread is a recipe from my ex-husband’s grandma Violet. I make it with only brown cane sugar (no invert beet sugar or white sugar) and add some Nutmeg, Clove and Cinnamon. 2 ½ cups flour, 1.5 cups packed brown sugar, 2 eggs, 1 tsp baking soda, 1 tsp salt, 4 mashed bananas, 2 tsp vanilla extract, ½ tsp Nutmeg, Cloves and Cinnamon. Bake at 350° F for 1 hour and 15 minutes (or until knife inserted into top of loaf shows clean).
Corned Beef Brisket done to perfection!The corned beef brisket into Reuben sandwiches is a family favorite. Cook a corned beef brisket in water with pickling spices the day before, water NOT to cover, but nearly, add 2 to 4 bay leaf, at 325° F for 3 to 5 hours (until fat melts off and meat is slightly purple). Remove from pan and wrap with plastic and refrigerate overnight.
A blend of pickled beef, swiss cheese and tangy sauce on Dill Rye breadNext day at dinner, thinly slice the corned beef against the grain. Drain the sauerkraut of liquid. Butter both sides of Dill Rye bread, brown inner side of slices, turn one slice over, layer swiss cheese, sliced brisket, sauerkraut and 1000 Island dressing, top with other slice and cover and cook at medium heat for about 3 to 5 minutes or until cheese is fully melted.
Slice in half and serve with french fries or tater tots or tomato soup.

In the meantime, an impromptu gathering occurred in NYC consisting of the Saturday Morning Garden Bloggers, Kishik, Missys Brother and Christin. Go NYC!
